Best Summer Snacks for Kids

It’s summertime, and for me that means vacations with friends and lots of outdoor eating. If you have a family with little munchkins running around, you’re probably looking for ways to keep them fed and occupied for the summer months without shipping them across the country to summer camp for months on end. Well here are three recipes that will keep your little darlings fed and occupied- all at the same time! These three kid friendly recipes get the kiddies in the kitchen with you and make them a part of snack making. Many hands make light work- even if they’re tiny hands.
Watermelon Popsicles

2 1/2 cups seeded diced watermelon
1/2 cup fresh raspberries or frozen unsweetened, thawed
6 tablespoons sugar
1 tablespoon plus 2 teaspoons fresh lemon juice
1 tablespoon light corn syrup
sliced oranges and kiwi to freeze into Popsicles as seen above, optional.
Combine all ingredients in blender; puree until smooth. Strain into 2-cup glass measuring cup, pressing on solids to extract as much liquid as possible. Pour puree into Popsicle molds, dividing equally. Add sliced oranges and kiwi if desired. Freeze overnight. (Can be prepared 1 week ahead. Keep frozen.)
English Muffin Pizzas
These might seem a little silly, but I always loved them as a kid. Don’t judge me. Try them on your little ones. I bet they’ll be a hit!

Peanut Butter and Jelly French Toast Sticks

1/2 cup peanut butter
8 slices bread
1/2 cup jam
5 large eggs
1/3 cup milk
2 teaspoons vanilla extract
4 Tablespoons butter
maple syrup
Spread the peanut butter on 4 bread slices and the jelly on the other 4 slices, and combine to make 4 sammies.
In a wide, medium bowl, whisk together the eggs, milk and vanilla.
In a large nonstick skillet, heat 2 tablespoons butter over medium heat. When the butter is almost melted, dunk two of the sammies into the french toast batter and let the excess drip off. Place in the pan and cook until golden brown, 3 to 4 minutes for each side. Repeat with the remaining 2 tablespoons butter and 2 sammies. Let cool slightly and cut into sticks; serve with the warm maple syrup.
