Creamy Cucumber Salad

The best way to create a fresh salad is to use in-season produce! Cucumbers have a crunchy and mild-flavor that is perfect for salads, sandwiches, relish trays, and cold soups. If you’re looking to make a great cucumber salad, you have to know when it’s the best time to shop for them. Cucumbers are year-round, but the quality of cucumbers are best during their peak season of May though July. Luckily, July was just a couple of weeks ago so we’re still enjoying tasty Cucumbers!
To properly prepare the cucumber be sure to rinse it under cold water before cutting. Often field cucumbers have a waxy skin that you can remove with a vegetable peeler. You may seed the cucumbers by cutting them lengthwise in half then using a small spoon or melon baller. Cucumbers are versatile and can be sliced, chopped, shredded, diced, or cut into strips, so prepare whichever way you prefer!
The following recipe is a great “healthy living” recipe that uses KRAFT Light Ranch Dressing. It is a simple and flavorful salad that will complement nearly any meal. Cucumbers and tomatoes are paired together to provide a good source of vitamin C.
What You Need

cucumbers, thinly sliced | |
|
2 |
plum tomatoes, diced | |
|
1/2 |
cup thin sweet onion slices | |
|
1/2 |
cup KRAFT Light Ranch Dressing | |
|
2 |
Tbsp. chopped PLANTERS Pecans, toasted |
Make It
Toss cucumbers, tomatoes and onion with dressing.
Sprinkle with pecans just before serving.
Toast Nuts:
Spread nuts in a single layer in a baking pan. Bake at 350°F for 8 to 10 minutes, stirring occasionally.
