Food Find Daily- Lime Sugar Sables
Posted on 09 September 2008 by joy
Spike Bakes features the most darling Lime Sugar Sable cookies. Kick up the flavor of lime in the cookie by first making a citrus sugar. Spike pulsed a heaping tablespoon of lime zest with 3/4 cup of sugar in a food processor. Another great way to extract all that lime flavor is to rub the zest into the sugar with the back of a spoon, getting as much of the zest oils into the sugar as you can.
Making a citrus sugar is a great way to get the maximum flavor into you cookie. Couple that cookie with a bit of chocolate ganache, and you’re in heaven. You’d be surprised how lime and chocolate compliment one another.
