Oatmeal Cranberry Cookies

Ingredients:
2 cups – butter
2 cups – Florida Crystals Organic Cane Sugar
3 eggs
2 1/2 teaspoons – vanilla extract
1/4 cup – whole wheat flour
2 cups – unbleached pastry flour
1 teaspoon – salt
1 teaspoon – baking soda
1 teaspoon – baking powder
2 cups – dry rolled oats
1 cup – dried cranberries

Preparation:
Preheat oven to 350 degrees F (175 degrees C).

Blend butter and sugar until fluffy. Add eggs and vanilla and mix well.

In a separate bowl sift flour, baking soda, and salt together. Stir into butter mixture until well mixed. Stir in the oats. Fold in nuts and cranberries.

Place dollops on cookie sheet, and keep them spread apart (this cookie spreads). Bake until they fall back down (8 to 10 minutes). Cool and enjoy.
