Grown Up Grilled Cheese

As a kid I was seriously hooked on peanut butter and jelly and grilled cheese sandwiches. I’m older now, and my tastes have evolved, but there’s still nothing like a delicious grilled cheese sandwich to make me feel and warm and cozy inside.
Today I made a simple grilled cheese with thick sliced sourdough bread, olive oil, Parmesan cheese and home grown tomatoes. It’s super simple and somehow still elegant and delicious.

Grilled Cheese with Smoked Turkey and Avocado
Grilled Cheese with Sauteed Mushrooms
Sweet and Spicy Grilled Cheese Sandwich
Grilled Cheese Sandwich with Bacon and Pear
Slice sourdough bread into thick slices.
Drizzle slices with olive oil on both sides and season with salt and pepper on both sides.
Place in a 450 degree F oven for 7 to 10 minutes until lightly toasted.
Top each slice of bread with a thin wedge of fresh Parmesan cheese and return to the oven for 2 minutes.
Top with fresh sliced tomatoes and a bit of sea salt. Enjoy!

Fantastic take on the humble grilled cheese sandwich. Homegrown tomatoes really elevate any food.
