Healthy Weekend Lunch

Some weekends I find myself running around the city running errands, seeing friends and maybe going out for a nice dinner. By the time Sunday night rolls around, I feel like I’ve barely taken a breath.
This weekend I’ve decided to stay in and enjoy my couch, my kitchen and a good book. Of course I’ll need some food to get me through the weekend. For lunch I’m going to try this BLT Salad. It’s got bacon. That’s all you need to know. Delicious, salty, crunch bacon. Sold? Of course you are.
BLT Salad with Ranch Dressing
Parade, August 2008
1/2 pound slab bacon, cut into 1×1/4-inch pieces
4 cups cubed (1 inch) French bread
1 teaspoon dried thyme
4 cups baby arugula
4 cups frisée
4 ripe tomatoes, cut into 1-inch cubes
2 tablespoons snipped fresh chives
1/2 cup prepared ranch dressing
1. Cook the bacon in a nonstick skillet over medium-low heat until golden brown. Drain on paper towel. Reserve 2 tablepsoons of the bacon fat.
2. Preheat the oven to 350°F.
3. Toss bread cubes with bacon fat, thyme, salt, and pepper. Spread in a single layer on a rimmed baking sheet and bake until golden, 12-15 minutes, shaking the pan once.
4. Place arugula and frisée in a bowl. Toss with the bacon, tomatoes, bread cubes, chives, salt, and pepper. Drizzle with dressing.

Oh my gosh! Speaking of salad with bacon, we have a really nice local restaurant here in Mobile, AL called “NOJA” (nojamobile.com). We went there a couple of weeks ago for our 1st anniversary. I ordered a baby arugula and frisee salad with gorganzola and bacon vinaigrette. Let me tell you something: the bacon vinaigrette was simply warm, fresh bacon grease! It was unbelieveable! Every single bite tasted like salty, smokey bacon…in a good way! Nope, I did not regret it one bit. Wish you could try it!
