Cinco de Mayo traditionally celebrates Mexico’s victory of the French army in 1862. Today it has become a holiday that celebrates Mexican culture in general, mainly through food and drinks (Margaritas anyone!) Try these Philadelphia inspired Mexican dishes at your fiesta!

Cheese and Bacon Jalapeno Rellenos:

These peppers are muy caliente! Prep the peppers buy cutting in half length-wise and hulling out all of the seeds (make sure you wear rubber gloves, and don’t touch your eyes), and filling the with a delicious mixture of Philadelphia cream cheese, bacon, shredded cheddar, and onion. You can boil the peppers before hand or throw them on the grill for a smoky flavor.

Stuffed Fiesta Burgers:

Turn up the heat with these burgers. Mix taco seasoning in with the ground beef, and make into patties. Top one patty with a tablespoon of Philly cream cheese and some shredded cheddar cheese. Take another patty and place on top. Pinch together to seal and then throw on the bbq. Serve with some fresh avocado slices and salsa.

This is a great appetizer to start off your Cinco de Mayo celebration. You can prepare them ahead of time, or make them right away. The Philly cream cheese makes the filling extra gooey and tastes great with the peppers. Cut out the veggies for a kid-friendly version. Try serving them with Green Green guacamole. Instead of using sour cream, try mixing some Philadelphia original in with your avocados. It thickens the dip and gives it an extra creamy texture.

A great idea would be to make a few different appetizers to munch on while enjoy a margarita or between shots of tequila. Serve these Creamy Tortilla Rollups, which are a simple mixture of Philadelphia cream cheese, refried beans and fresh cilantro are rolled up into a flour tortilla, and cut into bite-sized pieces. They will be sure to keep your guest going. Serve with some homemade salsa

Cream Cheese Flan:
No fiesta would be complete without a little something sweet. A flan is a great Mexican dessert, with a ton of flavor combinations, from orange, guava, and lime to chocolate and coconut. It takes a while to bake and set so make sure that you give yourself plenty of time, maybe even prepare the night before.
