Mother's Day Recipes!

Mother’s day is only a few weeks away, and if you still have no clue about what to do for mom on her special day, have no fear. Here are a few recipes and ideas using Philadelphia cream cheese that are sure to have mom grinning from ear to ear.

            I always made my mom breakfast for her special day. You don’t want her to have to lift a finger on her day, so start the day off right by serving her breakfast in bed. Make a pot of her favorite coffee or tea and serve her something amazing, like Stuffed French toast. It’s a thick slice of cinnamon-raisin bread stuffed with creamy Philadelphia cream cheese and thin sliced honey ham. Prepare it like you would regular French toast and drizzle maple syrup over. Or if pancakes are more moms’ style try the Dutch Boy Pancake. In total it takes about 40 min. to prep and bake, but it’s totally worth it.

            Maybe you did breakfast in bed for mom last year, and want to try something new. Why not set-up a fancy lunch for her and a few friends? You could do it in or outdoors, just make sure you create a beautiful setting with fresh flowers, some fancy drinks, and some delicious food. You could make it more of low –key lunch by serving a few appetizers such as; Tea Sandwiches, Mini Shrimp Cocktails, and a delicious Apricot-Almond spread, with crackers and sliced bread. Or you could go all out and make a main dish, like Tortellini with Salmon and Dill. The flavor combinations are perfect and the creamy Philly sauce makes it heavenly. Serve it with a mixed green salad and balsamic vinegar dressing.

            Either way make sure you serve up a great dessert. Here are a few suggestions for the ladies who lunch. Try the Creamy Lemon Squares or Pineapple Cream Puffs squares for a refreshing and light way to end the meal. Or you could try the Strawberry Margarita Dessert, which is a little more rich, and creamy. Garnish it with fresh strawberries. What woman wouldn’t love a margarita for dessert! Any of these would make a great party favor as well, just put a piece in a decorative take out container and send home with guests.

            Any of the recipes will make this mother’s day memorable, and have mom feeling very loved and appreciated. Make sure you handle the clean-up too! Happy Mother’s Day!
