Pancetta and Green Olive Pizza

Ever since I discovered how fantastically simple it is to make pizza at home, I vowed to lose the number to Pizza Hut and indulge in pizza whenever I see fit. Pizza crust is so simple to make, and since it’s a yeasted dough, when you conquer it, you’re bound to have a huge sense of accomplishment. Pizza at home, fresh from the oven is brilliant. I don’t know how I could have possibly waited so long to try it!
Pizza with pancetta and green olives is a great combination. It’s a little on the salty side, so you may want to cut back on the toppings if you’re sensitive.
Pizza with Pancetta and Green Olives
makes 1 large pizza
1 1/2 cup pizza sauce (I used the great sauce from Trader Joe’s)
1/3- 1/2 cup sliced green olives
1/2 cup cooked, crispy pancetta cubes
Preheat oven to 450 degrees F. Roll out pizza dough, spread on the sauce, and arrange toppings as you see fit. Bake pizza on a pizza stone, or on the back of a baking sheet, covered in foil Bake pizza for 12 minutes, or until the crust has browned and bubbled and the cheese is perfectly melted.
