Pull Apart Cinnamon Cake
Posted on 03 October 2008 by joy
By now you probably know two things about me. I love cinnamon rolls but I have a strange, almost unreasonable aversion to actually making them. For that reason, I’m always looking for cinnamon roll shortcut recipes.
A few weeks back I was smitten with Cinnamon Roll Muffins, this week I’m in love with Pull Apart Cinnamon Cake. With a few tubes of store bought biscuits, melted butter and a cinnamon sugar mixture, you’ll have cinnamon roll cake coming out of the oven before you know it.
Cinnamon Roll Pull Apart Cake
1 cup packed brown sugar
1 tbsp ground cinnamon
3 cans refrigerated buttermilk biscuits
1/2 cup butter, melted & divided
4 oz cream cheese, softened
1/2 cup powdered sugar
1-2 tbsp milk
Cut the biscuit dough into quarters with kitchen scissors. Mix sugar and cinnamon in a medium bowl.
Dip the biscuits into the melted butter then roll biscuit dough in the cinnamon/sugar mixture.
Place the biscuits into a greased bundt or tube pan. Drizzle with remaining melted butter.
Sprinkle leftover cinnamon/sugar mixture over the top of the biscuit dough and butter.
Preheat oven to 350 degrees F.
Bake for 40-45 minutes until golden. Let loaf stand for 5 minutes. Invert onto a plate.
Glaze:
Beat cream cheese and powdered sugar in a bowl with an electric mixer until well blended. Add milk beating until desired consistency is desired. Spoon glaze over warm loaf.

Yum, this is a lot like a monkey bread I make! I make a pseudo caramel sauce, with pecans throw in it and then pour it over the layers of the cinnamon sugar rolled biscuit dough. I don’t dip my biscuit in melted butter.
I will now though, bet that just sends it all over the moon besides helping the cinnamon sugar to stick better. I also don’t make a glaze maybe I’m missing something there as well. Guess I need to try that, too!
Thanks!

Okay, so have you heard of gorilla bread, then? Same idea, except when you cut the biscuits up, you spread them out a bit and put a pat of cream cheese in the center. Then you also add pecans in the bottom of the pan. Absolutely delish!

NO WAY LADY! As I am reading this, I already have one in the oven right now! I discovered it this week and just had to make it this morning. Although, in the South, we call it Monkey Bread. Can’t wait to eat it in a few minutes!
