Quick and Easy Cinnamon Rolls

When I want cinnamon rolls I turn into an irrational person. I simply refuse to wait the 3+ hours it takes for the dough to rise and rise and rise again. Here’s a trick- grab a bag of pre-made pizza dough (like the handy one from Trader Joe’s) and let it rest outside of the package for about 30 minutes. After the dough has lost it’s chill, roll it out and load it up with brown sugar and cinnamon. Roll it up, slice and bake. Just like that you’ve got warm cinnamon rolls fresh from the oven!
I tragically burned my first batch of these cinnamon rolls. Keep and eye on them or the sugar will burn. Of course this then lead me on a search for the perfect cinnamon roll recipe. Join the discussion here!
Quick and Easy Cinnamon Rolls
nonstick cooking spray
flour
1 10-oz. package pizza dough
2 Tbsp. sugar
1/2 tsp. cinnamon
2 Tbsp. water
1 Tbsp. pecans, chopped (optional)
1/2 cup powdered sugar
1/4 tsp. cinnamon
1 3/4 tsp. skim milk
Preheat oven to 425°F. Lightly coat 8 muffin cups with nonstick cooking spray. Lightly flour a large clean cutting board or pastry cloth. Unroll pizza dough on board. In small bowl, mix sugar and 1/2 tsp. cinnamon. Using pastry brush, lightly brush dough with water. Evenly sprinkle cinnamon sugar mixture and pecans (optional) over surface of dough. Starting at either short side of dough, tightly roll one end toward the other. Condense dough roll into 8″ roll. Cut dough into 8 - 1″ slices. Place slices in muffin cups. Bake 10-15 minutes or until golden brown. Let cool in muffin cups for 10 minutes. Combine powdered sugar, 1/4 tsp. cinnamon and skim milk in small bowl. Evenly distribute glaze over cinnamon rolls. Let sit for 5 minutes and remove from cups.
