Safeway’s Leftover Lounge – New Twists on Surplus Holiday Food

At our house we have more than enough memories from our Thanksgiving feast. First there’s the four pounds of turkey waiting to be consumed – a Safeway exclusive 2-Hour Turkey no less. (What a hit that was!) There are a few boxes of bacon remaining from our bacon wrapped date appetizers. Let’s not forget that second dish of cranberry sauce that we forgot to take out of the fridge with the last minute dinner rush. (Note to self – tape list on the refrigerator next year.) While the frugal mom in me doesn’t want to waste any food, the realistic mom knows that my picky eaters can only eat so many repeat Thanksgiving meals. Thank goodness for Safeway’s Leftover Lounge that provides delicious twists on holiday food surplus.
With almost twenty easy-to-make recipes, I’ve narrowed down my menu to five leftover dishes:
1. Turkey Sloppy Joes: This promises to be a tasty take on a retro favorite, made with turkey, lots of veggies, and whole wheat burger buns. I might even sprinkle some Parmesan cheese on top for some extra zing. My kids’ lunch boxes won’t know what hit them.
2. GarlicTurkey Lovers Enchiladas: I’ll be tired from having over twenty people in my home, so these made-in-advance enchiladas will be the perfect alternative to cooking on hectic school/work nights. I’ll simply make, put in the freezer, and heat up after a busy day of work.
3. Turkey Pasta With Bacon and Cranberry Sauce With the bacon already cooked, and the cranberry premade, the only thing I’ll have to do is boil water. There are a few more ingredients as well, but most of those I already have in my pantry.
4. Turkey Ribollita Soup The nights are getting cooler. This turkey and chicken broth soup promises to take the chill off. And, after a heavy holiday meal, it’s nice to know that this cozy concoction comes out to only 127 calories/serving.
5. Zesty Turkey Romaine Salad I would never have thought of putting Thanksgiving turkey over Romaine, but leave it to Safeway to create an innovative, yet simple salad. Using some croutons (left over from my stuffing), some water chestnuts, and Parmesan, it’s true to its name: Zesty!
With the December holidays fast approaching, I’m so grateful for Safeway’s low prices. After all, my kids are asking Santa for some big ticket items this year. With the money I saved utilizing the Leftover Lounge, the big guy might actually be able to afford them.
