Sourdough Pancakes

I’ve been experimenting with a Sourdough Starter.
A Sourdough Starter is a simple mixture of flour and water that is left to sit at room temperature, slightly exposed to air, so that it can take in bacteria from the surrounding air and develop yeast. This yeast that builds in the starter is used to flavor and leaven sourdough baked goods.
San Francisco is said to be the hub of amazing sourdough bread. Something about the sea air flavors the starters in San Francisco and makes for some kick ass breads.
I thought I’d try my hand at a Sourdough Starter for one reason along: Sourdough Pancakes. My affection for pancakes spans the ages. I’ve been known to eat pancakes for breakfast , lunch and dinner in the name of testing out a few recipes. Not only do I have no problem at all eating pancakes for three meals a day, but they’re also a crowd pleaser. My neighbors always come knocking when they know that my griddle is heating.
This sourdough pancake recipe produces very light and flavorful pancakes. They aren’t thick and fluffy. Mine turned out more thin and airy. It did take me a few rounds of tragic pancake loss to figure out the best way to cook and flip these beauties, but the recipe definitely yield enough batter for a few mistakes.

Sourdough Pancakes

Night before:
Mix 1 cup of starter, 1.5 cups warm water, 2.5 cups flour (a mix of white and wheat is good) cover with foil and let stand overnight. I put mine in the oven with the light on; it’s the perfect temp. The next morning:
Mix 1 egg, 2/3 cup milk, 1 teaspoon baking soda, 1 teaspoon salt, 2 tablespoons brown sugar and 2 tablespoons vegetable oil. Whisk into the mixture from the night before, let stand for five minute and drop onto griddle. I love ‘em with blueberries. Seriously, these are awesome, they’ll spoil you from bisquick cakes for life.
