Strawberry Rhubarb Empanadas

I’ve only just recently realized that empanadas, the traditional Spanish stuffed pastry, can be made both sweet and savory. How am I just now only figuring this out? Spicy Beef Empanadas have been my favorite so far, but now I’ve been introduced to Strawberry Rhubarb Empanadas. This changes everything!
Strawberry and rhubarb flavors combine to create a sweet and just slightly tart filling. No need to precook the fruit. The oven will do all that work for you. Try these unique summer treats. They’re just like the Spanish version of an American Hand Pie. So yummy!
