Weekend Date Night- Stay In!

In my quest to stay in and have a lazy weekend, I’ve put together a fun Saturday night date menu. There’s no need to spend loads of money eating out this weekend. Here’s a simple and impressively romantic meal that you can throw together and eat, all cuddled up on the couch next to your sweetie.
Shrimp in Ginger Butter Sauce

Serve with green beans, a fresh baguette and a lovely white wine.
12 ounces large shrimp in shell, peeled
4 tablespoons unsalted butter
3 teaspoons grated peeled ginger
4 tablespoons medium-dry Sherry
4 tablespoons coarsely chopped cilantro
Pat shrimp dry and season with salt.
Heat butter in a heavy medium skillet over medium-high heat until foam subsides, then sauté ginger 30 seconds. Add shrimp and sauté 2 minutes. Add Sherry and sauté until shrimp are just cooked through, 1 to 2 minutes. Stir in cilantro and season with salt and pepper.
Serve with: a baguette; green beans

Green Beans With Lemon
Gourmet March 1997
1/2 pound haricots verts (thin French green beans) or regular green beans
1 teaspoon fresh lemon juice
1 teaspoon finely chopped fresh flat-leafed parsley leaves (wash and dry before chopping)
1/2 teaspoon freshly grated lemon zest
freshly ground black pepper to taste
Trim regular green beans if using and in a large saucepan of boiling salted water cook beans until crisp-tender (2 minutes for haricots verts or 3 to 4 minutes for regular green beans) and drain in a colander.
In a bowl toss beans with lemon juice, parsley, lemon zest, and pepper and season with salt.
