Tonight for dinner- Cornflake Fried Chicken with smashed potato salad
Fried chicken is the ultimate American dinner. You can have this healthier version of fried chicken on the table in less than half an hour. The crunch and light sweetness from the crushed cornflake topping make this chicken dish absolutely irresistible. The smashed potato salad with scallions and peas is a perfect side dish. Eat it outside on the patio as the sunsets and that’s one glorious summer dinner.
Cornflake Fried Chicken
Gourmet, May 2008
1 (6- to 8-ounce) skinless boneless chicken breast
1 large egg
1/4 cup milk
1 1/2 cups cornflakes
1/3 cup vegetable oil
Pound chicken between 2 sheets of plastic wrap to an even 1/2-inch thickness.
Whisk together egg and milk in a shallow bowl. Crush cornflakes into another shallow bowl and toss with 1/4 teaspoon each of salt and pepper.
Heat oil in a small nonstick skillet over medium heat until hot.
Meanwhile, sprinkle chicken with 1/4 teaspoon each of salt and pepper. Dredge in egg mixture, letting excess drip off, then in cornflakes, pressing to help adhere.
Fry chicken, turning once, until golden and just cooked through, 5 to 6 minutes total. Drain on paper towels.
Smashed Potato and Pea Salad
6 ounces red boiling potatoes (about 4 small or 2 medium)
1/3 cup frozen peas
1 tablespoon unsalted butter
1/4 cup milk
1 scallion, chopped
Generously cover potatoes with cold water in a small saucepan. Add 1/2 teaspoon salt. Simmer, covered, until just beginning to get tender, about 8 minutes.
Add peas and simmer, partially covered, until potatoes are tender, about 5 minutes. Drain, then return to pan. Add butter, milk, and 1/8 teaspoon each of salt and pepper. Let stand off heat 1 minute, then add scallion. Coarsely mash.
