What’s for Dinner, Honey?

Not enough good things can be said about meat balls. Think of them as individual portions of meat loaf. Think of them as the cupcake of the dinner world.
I absolutely love meat balls. Not only are they totally delicious, but making them is like playing with your food. You have to get your hands dirty to mix and shape the balls, doesn’t that always make food taste better?
Tonight for dinner, Barbecue Chicken Meatballs, healthy and flavorful perfect with a side of rice and sautees spinach.
Barbecue Chicken Meatballs
Cookie October 2008
- 1 pound ground chicken
- 2/3 cup corn-bread crumbs or bread crumbs
- 1 egg
- 1 teaspoon chili powder
- 1 small onion, grated and drained
- 1/2 teaspoon paprika (optional)
- 1 teaspoon kosher salt
- 2 tablespoons applesauce
- 2 tablespoons olive oil
- 1 cup barbecue sauce (we like Trader Joe’s)
1. Combine the first 8 ingredients. Form the mixture into 1-inch balls.
2. Place the oil in a wide frying pan. Add the meatballs and brown them on all sides until cooked through, 8 to 10 minutes.
3. Add the barbecue sauce. Cook until it reduces and sticks to the meatballs, about 1 minute. Serve.
Tip:
When making meatballs, keep a bowl of water nearby to dunk your hands in, so the mixture doesn’t stick to your hands.

My husband has gained a great deal of weight since he’s become housebound (medical condition). Plus he’s been on edge lately waiting for the money transfer from Mr. Ogola from the National American Bank of Nigeria.
I am trying to wean him off the fatty foods he loves so much and on to low-cal but tasty alternatives.
Chicken meat balls will be on our menu soon!
